Plasencio said authenticity has been central since the restaurant opened, with recipes and cooking methods staying true to its roots while adapting to locally available ingredients.

The Medicine Hat-based business employs about 12 people and is operated by Plasencio and her daughter, along with other employed staff.

Earlier this year, the restaurant also launched a food truck serving tacos at community events, while the main location continues offering a broader menu of traditional dishes.

El Super Taco will mark its third anniversary this week, after opening in Medicine Hat in 2023.

Plasencio said the certification highlights the team’s efforts to share Mexican culture with the community.

The restaurant will celebrate the certification, its anniversary and the food truck launch at a public event Aug. 1 featuring live Mexican music and a mariachi performer.

“We want all of our customers to celebrate it with us,” Plasencio said.
