Ribbing a family affair at Rotary Ribfest

MEDICINE HAT, AB- As the smells of juicy ribs take over Rotary Ribfest, at Camp 31, it is an all-out family affair.

Pitmaster Jaime Williams of Brewton, Ala. has been cooking up ribs for 15 years, and together with his father, they have over 35 years of experience

“This is all we do all year long is barbecue, and we love coming to town,” Williams said.

In June of every year, Williams and his crew at Camp 31 hit the road travelling across Canada from B.C. to Newfoundland. Stopping at communities in between to slather on the sauce and get cooking.

“We are a big family, we are a bunch of people we all travel together so it is kind of like a big family,” he said.

21-year-old Dallas Reitman travels with his sister every summer. He said the best part of the job is seeing people enjoy the ribs.

“Ribs aren’t something people have all the time, especially authentic smoked ribs like ours, the Southern Alabama style, so when they first get that box, they see the food the smile on their face it is unbelievable,” he said.

As for how to cook up the perfect rack of ribs? These ribbers say time is everything.

“You have to keep it low and slow. If you don’t keep it low and slow you will mess it all up,” Williams said.
