Local Baker attests to popularity of cannabis edibles

MEDICINE HAT, AB — Cannabis edibles are set to be sold in stores before Christmas, and one local baker says people in the community are interested.

Since October 2018, McBride’s Bakery has hosted workshops where they show participants how to bake cannabis edibles safely.

The bakery has no intention of selling cannabis edibles, but thinks it’s a positive space to host the class.

“It seems to be what I can do is I can let people come in, bring their own stuff, nobody’s giving it away, nobody’s using it,” says Brendan Hillson, owner of McBrides Bakery. “We’re being very careful about how its handled in here and people who are into doing this can come in and hang with like-minded individuals and we can just bake together and take your own product home.”

Hillson says it would be far too complicated to sell edibles once legalization rolls around.

“There’s never going to be a point at this bakery an eclair with cannabis in it right beside our doughnuts, the laws regarding everything are just never going to let that happen at this bakery,” says Hillson.

However, he says one thing the store can do is teach people how to bake their own, and be safe about it.

“When we’re finished and I’ve shown these ladies how to make these cookies, they can be confident in what is this cookie, so I want them to feel safe with that.”

And local regulations make safety a lot easier.

“It is something where you do want to get the dosage right and in that sense, the labelling requirement from the cannabis shops have really helped because when you buy a tincture or an oil from a cannabis shop, it tells you right there ‘10mg of something’ so you know exactly what it is.”

Hillson hosted the third workshop on Monday, and says they’ve prompted members of the community to inquire about purchasing cannabis edibles at the bakery, typically the same demographic.

“This is the third time I’ve done this, after the very first bake which was in October or November, for the next week there were at least half a dozen individuals or pairs of people who came in asking ‘hey I heard I can buy weed cookies here’,” he says. “But you know every one of those people was an old lady, they were all just like the old ladies you see at church.”

He says he expects to host more cannabis edible workshops, but has no solid dates set.
