Meat-lovers rejoice with the return of Ribfest to Medicine Hat this weekend

MEDICINE HAT, AB – Medicine Hat Ribfest is back, and ribbers were out early this morning, smoking meat and pouring sauce for the first day of the festival.

Hatters were eager to try ribs from the four different stands. Billy Bones BBQ, Blazin BBQ, Bone Daddy and Buckeye BBQ were all giving out sauce samples, hoping to draw customers to their stand. Hatters had diverse opinions on what flavours they think a rib should have.

“It’s gotta be spicy,” one Hatter says.

Another adds, “mesquite, a little bit of spice, a little bit of sweet.”

Ribfest has a host of different activities including a kids zone, the beer gardens, and local food trucks for those who aren’t rib fanatics. While today’s festival-goers enjoyed the sunshine and food, the workers were making sure to have fun too.

Two Ribbers at the Billy Bones BBQ stand say the friendly vibe at festivals is why they love their job.

“Cooking in general is a fun activity, but this atmosphere and just the events we put on are absolutely incredible, so that was the main draw for me,” says Edward Bonvie of Billy Bones BBQ

However, Lucas Sibbert of Billy Bones BBQ says going to festivals is not just fun and games and that making ribs requires lots of prep and precision

“A lot of care on the way that you rub this product and the way that you spice it, along with the fact that we smoke it with the cherry wood. You just want to make sure that you’re getting a nice tender product and something that’s consistent all the time.”

Alexander Muth, manager of food and operations at Bone Daddy’s BBQ adds, “I love smoking food, I love attention to detail and it’s one of the things that you just always have to do with this job.”

Ribfest will continue through the weekend, ending Sunday at 7pm. Finlay Bridge is closed for the event, and parking downtown is sparse so Hatters are encouraged to walk or take transit to the area. There is seating inside of the beer gardens, otherwise Hatters may need to eat their ribs in the Riverside Veterans park.
